Quinoa & Chocolate Energy Balls

A delicious, nutritious and well balanced sweet snack.

Ingredients

  • 1 cup cooked quinoa 1/3 cup uncooked quinoa + 2/3 cup water
  • 3/4 cup desiccated coconut plus extra for coating
  • 1/4 cup almond butter or nut butter of choice
  • 3 tbsp cacao powder
  • 1/4 cup pure maple syrup
  • 1 tbsp chia seeds
  • 1/2 tsp vanilla extract
  • pinch of fine grain salt

Instructions

  • Cook quinoa by combining 1/3 cup of uncooked quinoa and 2/3 cup water to a medium pot. Bring to boil, cover, reduce the heat and simmer for 15 minutes. Remove and let it cool.
  • Add all ingredients to a medium sized mixing bowl and stir until combined.
  • Roll a spoonful of mixture into a ball and coat it in desiccated coconut.
  • Store in an air-tight container in the fridge.

Notes

These Quinoa and Chocolate Energy Balls can be stored in an air-tight container in the fridge for up to four days.
