Ingredients
1cupcooked quinoa1/3 cup uncooked quinoa + 2/3 cup water
3/4cupdesiccated coconut plus extra for coating
1/4 cupalmond butteror nut butter of choice
3tbspcacao powder
1/4cuppure maple syrup
1tbsp chia seeds
1/2tspvanilla extract
pinch of fine grain salt
Instructions
Cook quinoa by combining 1/3 cup of uncooked quinoa and 2/3 cup water to a medium pot. Bring to boil, cover, reduce the heat and simmer for 15 minutes. Remove and let it cool.
Add all ingredients to a medium sized mixing bowl and stir until combined.
Roll a spoonful of mixture into a ball and coat it in desiccated coconut.
Store in an air-tight container in the fridge.

These Quinoa and Chocolate Energy Balls can be stored in an air-tight container in the fridge for up to four days.
