
Today I want to share with you what I’ve been eating (& loving) recently. I hope it can serve (pun very much intended) as some healthy meal and snack inspiration for anyone in a food funk.
Everything below is not only delicious, but also nutritionally balanced to give me energy and keep me fuller for longer. You can read all about how to build a nutritionally balanced meal in my post here.
And of course, everything is Coeliac-friendly to suit my dietary requirements. So, anyone else with Coeliac Disease or Non-Coeliac Gluten Sensitivity can find some inspo too.
Eggs & Avocado Toast
Very basic, I know, but this has easily been my favourite breakfast these past couple of months. It’s simply toast with some EVOO and avocado, topped with a squirt of lemon juice (or in my case, a deluge of lemon juice), salt and pepper. I then cook up some scrambled eggs with herbs. And at the end, add some rocket and pepitas.


Chocolate Yoghurt Bowls
These bowls single-handedly converted me into a yoghurt fan.
My go-to yoghurt is typically Vaalia french vanilla yoghurt. I like the taste and texture, but more importantly, the probiotic strains used in it have been researched to show health benefits (same with Activia yoghurt). I then mix the yoghurt with chocolate protein powder to increase the protein content further and make it more of a meal. However, you could also use a higher protein yoghurt including Chobani greek yoghurt or Danone YoPro yoghurt.
I then topped it with granola (I used the Food for Health GF chocolate and coconut granola) and fruit. I also sometimes add chia seed pudding, you can find my recipe here.


Chocolate Nut Slice
If you follow me on instagram and tiktok you’ll have no doubt seen this recipe already. It is one of my absolute favourites. It not only hits the chocolate cravings, but the fibre, fat and protein help to slow down the rate of absorption of glucose into the bloodstream. There’s also a wide range of micronutrients in the mixed nuts and seeds. You can check out the recipe here.


Chicken & Vegetable Bake
As the weather starts cooling, this recipe will be in fortnightly rotation. It’s comforting, warm and so great for meal prepping. Not to mention it helps you get in your daily five serves of veggies. I just posted the recipe here.


Chicken & Vegetable Bowls
These throw-together chicken and vegetable bowls are my weekly go-to meal. You simply meal prep some roasted veggies and roasted/grilled chicken and then throw it all together and heat it up when you’re ready to eat.
In the one below I also added in some quinoa, hemp seeds and roasted chickpeas for some plant-based protein and crunch. As well as some baby spinach and rocket for added variety. I’ll also often top it with cheese for added taste!

Crispy Rice Paper Rolls
An old favourite of mine, originally born out of my frustration in not being able to find gluten free spring rolls. They’re perfect for when you want something warm and crunchy! You can find the recipe on my instagram here (I’ll be uploading them to the blog soon too).


Roasted Chickpeas
I love having some roasted chickpeas on hand when I want a healthy snack. They’re also a yummy way of including legumes into your diet. Click here for the recipe.

Salmon & Veggies
Salmon and veggies is another easy go-to meal for me! If you don’t already, I encourage you to incorporate fish into your diet at least twice a week. It’s a great source of lean protein and omega-3 fatty acids (particularly oily fish, like salmon).
On the bottom left I did a one-pan meal and loosely followed this reel by JS Health.


Banana Pancakes
These are so great for when you have ripe bananas to use up. Here’s the gluten-free recipe I used and it made approx. 10 small/thin pancakes.
Ingredients:
- 1 ripe banana
- 1 egg
- 1/2 cup of gluten free self-raising flour
- Drop of vanilla essence
- Milk
To make:
- Mash the banana
- Add eggs and vanilla essence
- Add gluten free self raising flour
- Add milk until you get the desired pancake consistency, stirring as you go.
- Cook on a pancake pan!
- Add desired toppings.
